Paleo AIP Slow Cooker Shredded Beef

This Paleo AIP Slow Cooker Shredded Beef is one of those super easy and incredibly versatile recipes that can be served in so many ways.

It’s naturally gluten-free, dairy-free, and compliant with both the Autoimmune Protocol & Whole30, too!

A delicious and simple main course that’s perfect for tacos or lettuce wraps – or paired with cauliflower rice or even just simple roasted vegetables. Leftovers can also be added to vegetable soups, or as a topping for mixed green salads for a quick lunch the next day.

This Paleo AIP Slow Cooker Shredded Beef is lazy cooking at its best

You can make this in either a slow cooker, or in a pressure cooker like the Instant Pot! I have both on hand in my kitchen in case I need to slow cook one recipe but pressure cook another recipe in tandem.

I’m not the biggest fan of batch cooking, but when I do I like to keep the recipes as easy as possible. I also make sure the recipes have minimal ingredients and not a lot of chopping involved, that way I can maximize my time in the kitchen. (Like when I do Capsule Meal Prep.)

Another lazy kitchen tip for those of you with an Instant Pot: Spoil yourself with an extra inner pot (be sure to check which size you need for your model). That way if you need to soak one dirtied pot in the sink, or want to immediately cook a side dish in the electric pressure cooker right after you cook the main course (like this Brisket), you’ll still have another pot clean and ready to use!

Ways you can serve this Paleo AIP Slow Cooker Shredded Beef

When you have a simple main course prepared and waiting for you in the fridge and all ready to reheat, you’ve got the foundation laid for so many different meals.

Try this shredded beef on top of steamed cauliflower rice or over mashed sweet potatoes.

Serve it chilled over a fresh green salad drizzled with Caramelized Strawberry Vinaigrette – or warmed over sauteed kale greens.

Different spice combinations

This Paleo AIP Slow Cooker Shredded Beef has a Mexican flair to it, but you can totally swap out the spices to change up the flavor!

Here are 4 of my favorite AIP and Whole30 seasoning combos:

Tandoori Beef: ground turmeric, garlic powder, onion, ginger powder, ground cinnamon, lemon juice, pumpkin puree, cilantro

BBQ Beef: ground horseradish, garlic powder, onion powder, smoked tea, apple cider vinegar, apple juice, drizzled with this No-Cook AIP BBQ Sauce

Korean Beef: ground ginger, garlic powder, smoked tea, coconut aminos, orange juice, white wine vinegar, green onions, tapioca starch, cilantro

Irish Beef: ground horseradish, garlic powder, onion powder, dried thyme, bay leaf, shredded carrots, fresh parsley

Paleo AIP Slow Cooker Shredded Beef

Ingredients

  • Olive oil or coconut oil
  • lbs. beef chuck roast
  • Sea salt to taste
  • 1 medium yellow onion diced
  • t. ground cumin (for AIP, sub turmeric)
  • 2 tsp garlic powder
  • ½ tsp smoked paprika (for AIP, omit or sub ground smoked tea)
  • 1 tsp ginger powder
  • 1 tsp dried oregano
  • 1 ½ cups bone broth or water
  • 1 Tbsp red wine vinegar

To serve (optional):

  • 1/3 c. fresh cilantro chopped
  • 2 large limes cut into 8 wedges each

Instructions

  • Grease the bottom and sides of 6-quart slow-cooker crock with oil.
  • Generously season the beef with salt on all sides and place in slow cooker crock. Add all remaining ingredients, cover, and cook on low for 8 hours.
  • When done cooking, remove lid and shred beef with two forks or a meat chopper while still inside the slow cooker. Allow shredded beef to marinate in warm cooking juices for 5 minutes to absorb more flavor.
  • Transfer shredded beef from slow cooker to a serving platter with tongs or a slotted spoon, allowing excess liquid to drain into the pot (save the liquid for soups and stews – it’s delicious!).
  • Optional: top with chopped cilantro and serve immediately with fresh lime wedges and additional cooking juices on the side, if desired. Enjoy!

Notes

For best slow cooker results, allow meat to cook on low for at least 8 hours.
You can also cook this on high pressure in an Instant Pot or pressure cooker for 75 minutes.
