This AIP Beef Bulgogi Pan recipe is my partner’s (“Hunni”) absolute favorite sheet pan meal.

He has been so supportive of everything I do, so I thought it would only be fair to share this exclusive recipe from my first book, AIP Sheet Pan Recipes with you guys as well!

It’s got tender steak that crisps up on the edges.

Chock-full of veggies like cabbage and carrots, and tender, umami-salty steak with a hint of sweetness (that can be omitted if you are following a keto or Whole30 diet) without inflammatory ingredients like soy and gluten.

There’s no need to order out.

Just a few simple steps and you’ll be nomming down on some authentic-tasting bulgogi in no time!

With AIP Sheet Pan Recipes I kept the cooking process in the kitchen as simple as possible for those who are struggling with their health.

It’s hard enough to just function with your daily human duties when you have chronic illnesses, let alone find the time to cook AND clean up a pile of dishes when you are on a healing protocol…since virtually everything you eat requires scratch cooking.

Even if you don’t have any special equipment other than a blender, the dishes come together in a snap.

I don’t like to use a jillion bowls or utensils either while I cook, so those techniques are in the book too.

And if you are a fan of parchment paper like myself, you’re in for a treat: peel that baby off after you’re done and voila…no tiresome scrubbing!

AIP Beef Bulgogi Sheet Pan

Paleo AIP Beef Bulgogi Pan – Korean BBQ made quick and easy on a sheet pan! Gluten free, soy free and deliciously compliant with the autoimmune protocol.

Ingredients

Veggies

  • 1 tsp avocado oil
  • 1 small sweet onion thinly sliced
  • 1/4 of a medium cabbage thinly sliced
  • 2 medium carrots grated

Beef

  • 1.5 lb steak of choice preferably a tender cut, very thinly sliced into strips along the grain (a mostly-frozen steak will be easier to slice versus a thawed steak)
  • 1 tsp avocado oil
  • 1/3 cup coconut aminos
  • 1 Tbsp lemon juice
  • 2 tsp coconut nectar or honey
  • 1 tsp molasses
  • 1/2 tsp ginger powder
  • 4 cloves garlic pressed or minced

Instructions

  • Place a rack in the center of your oven, and line a large sheet pan with parchment.
  • Add the onions to the center of the pan, and drizzle with 1 tsp of avocado oil.
  • Toss with tongs to coat, and place in the cold oven.
  • Heat the oven to 475 F, allowing the onions to come to temperature as the oven heats (this helps to soften them a bit).
  • When the oven has come to temperature, remove the pan from the oven and set aside.
  • In a medium bowl, whisk together 1 tsp of avocado oil, aminos, lemon juice, nectar or honey, molasses, ginger powder and garlic.
  • Add the steak to the sauce and stir well to coat. Set aside.
  • Add the cabbage and carrots to the pan with the onions, and toss well with tongs.
  • Scoot half of the veggie mixture to one side of the pan, and scoot the other half to the other side…leaving an empty space lengthwise in the center of the pan for the steak.
  • Place the steak in an even layer in the empty space, spreading it out as thinly as you can.
  • Drizzle any remaining sauce over the top of the steak.
  • Bake for 15 minutes or until steak is cooked through and slightly browned on the tips, and veggies have browned on top a bit.
  • Serve veggies in bowls topped with steak.

Notes

If you have time to boil some sweet potato starch noodles or spiralize/grate some zucchini noodles, this also goes well atop oodles of noodles!
